Black Bean Brownies

Ingredients:
400 grams tin of black beans, drained, rinsed
2 large eggs
0.25 cup olive oil
1 tsp vanilla extract
0.5 cup almond milk (or preferred alternative)
2 tsp baking powder
1 cup almond meal
0.25 cup coconut sugar
0.5 cup cocoa powder
0.25 cup buckwheat flour
100 grams dark chocolate baking chips
Method:
Preheat the oven to 170C (fan forced) and line a baking pan (I used a 275x175mm pan) with baking paper.
Using a food processor, blitz the black beans, eggs, oil and vanilla extract until smooth.
In a large bowl, combine all the dry ingredients except for the choc chips, and mix well.
Pour the black bean mix into the dry ingredients and stir until well combined. You may need a dash more milk if it seems too dry. The mixture should be like a thick batter that you need to scoop out.
Finally, stir through the chocolate chips!
Transfer the mixture into the baking tray and pop it in the oven for 30min.
Once cool, cut into 16 portions and enjoy!
If you like the bitter richness of dark chocolate, swap the cocoa powder for cocao. That’s what I’ve used here. Otherwise cocoa will give a smoother chocolate flavour.
These brownies are gluten free and can easily be made dairy free by swapping the choc chips for a plant based alternative.
